Skip the step of halving each breast. Instead, place the marinated breast flat on a cutting board, then use a sharp knife to slice horizontally through the breast while securing it with your hand resting on top. You may also separate the "tenderloin" and remove the tendon running through it. Unlike pounding, this method does not tenderize the meat—but I have never found that step necessary.
