These vibrant chicken burgers are packed with ginger, garlic, cilantro, and scallions—combining fresh, bright flavor with a satisfying textural crunch. The key to their tender, light texture lies in a small amount of mashed avocado mixed into the ground chicken before cooking. A citrusy soy mayonnaise is used dual-purpose: incorporated into the patties themselves and generously spread atop the finished burger. (Fish sauce can substitute for soy sauce, though reduce the quantity and adjust to taste.)
Kewpie—a Japanese mayonnaise made with rice wine vinegar and egg yolks instead of distilled vinegar and whole eggs—works exceptionally well here, but any preferred mayonnaise is a suitable replacement. Fresh jalapeños add a crisp crunch when biting into the burger, while pickled jalapeños offer an extra hit of acidity if desired.
