Gyeran bap is an essential Korean pantry staple comprising fried eggs stirred into steamed white rice. In this iteration, eggs are fried and lightly puffed in a shallow pool of browned butter. Soy sauce—reduced in the pan— seasons the rice, complemented by a final sprinkle of salty gim (roasted seaweed). A small amount of sesame oil imparts a comforting nutty note, while runny yolks serve as an impromptu sauce for the rice, coating each grain in a golden, eggy sheen. (Naturally, eggs can be cooked to your desired doneness.)
This single-serving meal can be scaled to serve more people: simply double, triple, or quadruple all ingredient quantities, using a larger skillet or repeating the process with a smaller one.
