Ingredients (per serving)
1 cup (200g) ripe fresh peaches, pitted and chopped (or 1 cup frozen peaches, thawed)
ΒΌ cup (30g) raw almonds, soaked in water for 10 minutes (see Prep Notes)
Β½ cup (40g) rolled oats, soaked in water for 10 minutes (see Prep Notes)
1 cup (240ml) unsweetened almond milk (adjust for desired consistency)
Β½ teaspoon pure almond extract
1β2 teaspoons agave syrup or honey (optional, for sweetness)
1β2 ice cubes (optional, for chill)
Instructions
Prep Soaked Ingredients:
In a small bowl, cover almonds with water; let soak for 10 minutes. Drain and rinse.
Repeat with oats: cover oats with water, soak for 10 minutes. Drain and rinse.
Note: Soaking softens almonds (reducing bitterness) and oats (enhancing creaminess), contributing to the total 18-minute time.
Blend:
Add soaked almonds, soaked oats, chopped peaches, almond milk, almond extract, and sweetener (if using) to a high-speed blender.
Include ice cubes if desired. Blend on high for 1β2 minutes until completely smooth and creamy.
Serve:
Pour into a chilled glass and enjoy immediately.
Pro Tips
Substitutions: Use frozen peaches (1 cup) if fresh are unavailable. For quick prep, skip soaking by using pre-soaked almonds (reduce total time to 8 minutes).
Sweetness: Adjust with extra agave/honey for sweetness, or omit for a low-sugar option.
Texture: Thin with 1β2 tbsp almond milk if too thick; thicken with ice cubes if too thin.
