Introduction
This vibrant, five-ingredient salad highlights the textural contrast of crunchy cucumbers and creamy avocados, crafted with minimal effort for maximum flavor. Alternating-stripe cucumber peeling preserves structural integrity while enhancing seasoning absorption, while acidified avocado prevents browning and adds glossy richness. Customize with optional toppings for versatility.
Ingredients
Core Ingredients (5):
2 medium English cucumbers (unpeeled or partially peeled)
1 ripe avocado (≈150g/5.3oz)
½ tsp fine sea salt
1 tbsp fresh lemon juice (or white vinegar)
¼ tsp red pepper flakes
Optional Add-Ins:
Fresh herbs (dill, parsley, cilantro, or mint)
Leafy greens (arugula, butter lettuce)
Crumbled feta, goat cheese, or toasted nuts (almonds, walnuts)
Soft-boiled eggs (sliced)
White beans or chickpeas (for protein)
Instructions
Step 1: Prepare the Cucumbers
Wash cucumbers thoroughly. Peel the cucumbers in alternating vertical strips (≈1cm/0.4in wide) to create a striped pattern. This method retains the cucumber’s structural integrity while maximizing surface area for seasoning absorption.
Cut peeled cucumbers into 1.5cm/0.6in bite-sized cubes. Transfer to a colander, sprinkle with ½ tsp salt, and toss to coat. Let sit for 5–7 minutes to draw out excess moisture; drain and pat dry lightly with paper towels.
Step 2: Prep the Avocado
- Slice the avocado in half, remove the pit, and scoop flesh into a bowl. Drizzle with lemon juice and toss gently to coat all surfaces. This acid prevents enzymatic browning and brightens flavor.
Step 3: Combine and Emulsify
- Add the salted, drained cucumbers to the avocado bowl. Gently fold and stir with a fork/spoon—avoid over-mashing. Break the avocado into small, glossy fragments to coat the cucumbers, creating a creamy texture.
Step 4: Season and Assemble
- Stir in red pepper flakes, remaining salt, and optional herbs. For richness, drizzle with 1–2 tsp olive oil and toss. Adjust seasoning with additional salt or acid if needed.
Step 5: Add Custom Toppings
- Fold in mixed greens (if using), protein sources (eggs, beans), or crunchy toppings (nuts, cheese) just before serving to preserve texture.
Serving Tips
Best enjoyed immediately for peak freshness.
For longer storage, refrigerate the cucumber-citrus mixture for up to 2 hours; add avocado and toppings just before serving.
Swap lemon for lime for a zesty twist, or add a pinch of sugar to balance acidity.
This salad balances crispness and creaminess, making it ideal for light meals, side dishes, or picnic fare.
